Heart-warming & Delicious Fig Recipe

We love this fig season! Starting with wonderful fresh ingredients means that you can live a wonderful busy life & still find the time to eat healthy seasonal meals. 

 

 

The first thing to point out is that this healthy recipe was simple to make. It would fit in to a busy day & leave you feeling great about how delicious your creation is! It also created a heart-warming scent that took over the kitchen so we just had to share it. 

 

After a little googling & oogling figs & other lovely fresh ingredients online we put together, well actually threw together, a combination of ingredients & within 20 minutes had a delicious autumn pudding ready to eat.  

 

Ingredients - Serves 4

4 fresh figs, sliced in half
1 flat teaspoon of ginger powder or half a teaspoon of fresh grated ginger
1 heaped teaspoon of cinnamon powder
4 tablespoons raw honey
3/4 cup of unsalted cashew nuts
3 tablespoons freshly squeezed orange juice
5-6 fresh mint leaves, chopped finely
120g of mascarpone cheese

 

 

Preparation

Place the figs in a baking tray, lined with aluminium foil (the foil helps you scoop the honey mixture with the figs once baked)
Mix the honey with cinnamon & ginger powder
Spread the honey mixture over the cut-side of the figs
Bake the figs in the oven at 180 degrees C for 12-15 minutes
Roast the cashew nuts on a non-stick frying pan without oil.
Crush the roasted cashew's in a pestle & mortar
Mix the orange juice with the cashew nuts
Place the figs on individual dishes to serve.
Divide the mascarpone into 8 spoons & place 1 spoon onto each half fig.
Sprinkle the cashew mix & chopped mint leaves over the mascarpone & figs.
